The eSIM provides data only, and does not carry calls or SMS to your own number. For calls and messages you can use WhatsApp and similar apps over the eSIM's data. A regular call or SMS to your home number reaches you only through your home line, at your carrier's roaming rates - so it is worth switching it off during the visit. The number is not lost, and you switch it back on when you fly home.

Yes, installing needs Wi-Fi - which is why you install at home before the flight. Activating on landing needs nothing beyond switching the line on in Settings.
