Deleting doesn't erase the plan you bought. Your QR code and codes stay on your private order page, and you can reinstall anytime. Still - as long as you're using the plan, there's no reason to delete it.
There's no reason to keep a finished plan's profile. Deleting frees a slot for the next one.
Phones limit how many eSIM profiles can be stored. If you need room for a new plan, delete an old inactive one.
Settings › Cellular › tap the plan's line › "Delete eSIM".
Settings › Connections / Network › SIM manager › pick the eSIM › "Remove / Delete".
